Lamb Rogan Josh
- 1.5 lbs Lamb (boneless lamb, cubed)
- 2 Potatoes (medium potato, cut in 1-1.5″ cubes)
- 1 tsp Salt (adjust per taste)
- 1/2 cup Yogurt
- 2 tsp Degi Mirch (or 1/2 tsp cayenne + 1 tsp paprika, mixed with 2 tbsp water)
- 1/2 Cup Red Onion (or shallot, very small chopped or grated)
- 3 tbsp Canola Oil
- 1.5 tbsp Ginger Garlic Paste (4 garlic cloves + 1-inch ginger, grated)
- 1/4 tsp Turmeric (powder)
- 1 tsp Coriander Powder
- Whole Spice Blend (or use 1.5 tsp Garam Masala)
- 2 Cloves
- 2 Bay Leaf
- 6 Cardamom (2 whole black and 4 green cardamoms )
- 1 tsp Fennel Seeds
- 1 Whole Dry Red Pepper (red chili,(sabut lal mirch))
- 1 Mace (Javitri) (1 blade)
